Eggless Vegetarian Egg Salad

4 oz. tofu (firm), drained
1 tsp. apple cider vinegar
1 pk. artificial sweetener
2 tsp mustard
1/2 tsp. turmeric
1 tbsp. diced celery
1 tbsp. diced onion
dash of paprika & pepper

Crumble tofu into small bowl.  In a separate bowl, combine vinegar, sweetener, mustard and turmeric. Mix thoroughly.  Refrigerate 30 minutes to allow flavors to meld.

Makes 1 serving.

1 vegetable
